Irish Cream Cheesecake--Perfect for St. Patrick's Day

Irish Cream Cheesecake Recipe
 
 
List of Ingredients:
* 1 3/4 cups finely crushed graham crackers (recommend chocolate graham crackers)
* 6 tablespoons butter (I actually used 8 tablespoons)
* 3 - 8oz packages of cream cheese  (softened)
* 1 cup sugar
* 4 large eggs
* 1/3 to 1/2 cup Irish Cream Liqueur
* 3/4 cup chocolate mini morsels (recommend Toll house Semi-sweet)
* 1 teaspoon flour

Prep:
* Grease a 9 or 9 1/2 inch spring form pan
* Preheat oven to 375
* Place 1/2 cup of morsels in a bowl with the flour and mix together to coat the morsels with the flour.

Making the crust:
* Crush the graham crackers
* Melt the butter
* Mix the butter with the finely crushed graham crackers
* Place the butter / graham cracker mixture in the greased pan
* Spread the mixture evenly and up the sides about 1 inch

Making the filling:
* In large mixing bowl, beat the cream cheese and suger until creamy
* Add the eggs one at a time blending well in between each
* Add the Irish Cream Liqueur and blend in well
* Add the 1/2 of morsels / flour mixture

Merging the filling with the crust:
* Pour the filling into the crust
* Ensure the filling is somewhat even in the crust
* Sprinkle the remaining 1/4 cup of morsels over the top
* Place the pan into the preheated oven.
* Bake for 40-50 minutes until golden brown around the side but the center still moves slightly.

Final Steps:
* Remove the pan from the oven and let cool for 10 minutes.
* Remove the cake from the pan and place onto the serving plate
* Refrigerate for about 3 hours for it to set up

Last Step:
* Pull out of refrigerator and cut your self a nice piece of cheesecake
* Sit back and enjoy eating your wonderful cheesecake :)

美味靓汤--Shrimp-artichoke Bisque

 
感恩节去先生的姐姐家,尝到好汤一道。讨了recipe,回家试了一回,又请朋友来家品尝,皆云“好汤”。味道看来是没得说,不过这汤的原料中有太多butter,cream 之类,不是很健康。趁年轻可以多用几回。
 
Shrimp-artichoke Bisque
 
3/4 onion                    1pt half&half
2 cloves garlic            1 can cream mushroom soup
1 stick butter              1 can drained artichoke,artichoke quartered
1 lb raw shrimp          1 tbsp parsley
Dash tabasco sauce
 
Put butter garlic and onion in the pot, saute and add shrimp, cook until pink on both sides. Then add rest of the ingredients. Cook until warm. Do not boil.
 
Quite easy to make. It is tasty.

朗姆酒味琥珀桃仁Spiced Pecans with Rum Glaze

明天打算和先生试作Spiced Pecans with Rum Glaze,不知道怎么翻译好,就叫朗姆酒味琥珀桃仁好了。这个方子是从好友lynn 那儿讨来的。 Lynn是意大利裔的美国人,厨艺一流。有这样的好朋友真是有口福。我们从她那儿学的IRISH CREAM CHEESECAKE好吃极了,等下次再作的时候,一定照张照片,连方子一并贴这儿,跟各位分享。
 
今天要分享的这个方子是种很好吃的小零食,喜欢胡桃仁的朋友尽可一试,吃果仁过敏的朋友对着这方子过过干瘾也就是了
 
Spiced Pecans with Rum Glaze
 
2 cups raw pecan halves
SPICE MIX
2 Tablespoons sugar
3/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
RUM GLAZE
1 Tablespoon rum, preferably dark
2teaspoons vanilla extract
1 teaspoon brown sugar(light or dark)
1 tablespoon unsalted butter
 
1.Adjust the oven rack to the middle position and heat the oven to 350 degrees.Line a rimmed baking sheet with parchment paper and spread  the pecans on it in an even layer. Toast for 4 minutes, rotate the  pan, and continue to toast until fragrant and the color deepens  slightly, about 4 minutes longer. Transfer the baking sheet with  the muts to a wire rack.
 
2.For the spice mix: while the nuts are toasting, stir the sugar, salt, cinnamon,cloves and all spice together in a medium bowl; set aside.
 
3.For the glaze:bring the rum, vanilla, brown sugar and butter to a boil in a medium saucepan over medium-high heat, whisking constantly. Stir  in the toasted pecans and cook, stirring constantly with a wooden spoon, 
until the nuts are shiny and almost all the liquid has evaporated,about  1 1/2 minutes.
4.Transfer the glazed pecans to the bowl with the spice mix; toss well to  coat.Return the glazed and spiced pecans to the parchment-lined baking  sheet to cool.(The nuts can be stored in an airtight container for up two
to five days.)
